Jeden z najbardziej cenionych producentów Gigondas, którego początki sięgają 1874 roku. Od ponad 30 lat posiadłością zarządza należący do czwartego pokolenia rodziny Yves Gras. Należy do niego 13 hektarów w Gigondas i kolejne 10 hektarów rozsianych w innych miejscach południowej Doliny Rodanu. W Gigondas powstają dwa wina z pojedynczych winnic. Pierwszą jest Hautes Garrigues, historyczna winnica należąca do rodziny od pokoleń, z której pochodzą długowieczne wina o mocnej strukturze. Drugą jest malownicza Clos Derrière Vieille, na którą przypada 3,5 hektara tarasów obsadzonych grenache, syrah i mourvèdre. Do tego dodać należy kupaż pochodzący z ośmiu różnych parceli Gigondas (tzw. “lieux-dits”) – Aux Lieux-Dits. Wina pojedynczych winnic z Châteauneuf-du-Pape pochodzą z piaszczystego La Crau Ouest i nieco cieplejszej Les Saintes Vierges. Z tej ostatniej winnicy a także z dwóch innych – La Font du Pape i Le Pradel – powstaje także cuvee Habemus Papam. Oprócz nich spod ręki Yves’a Grasa wychodzą wina z apelacji Vacqueyras, Rasteau, Côtes-du-Rhône i sygnowane jako IGP Vaucluse. Wszystkie pochodzą z organicznych upraw i słyną z precyzji, czystości i elegancji.

AGE OF VINES : Average 70 years.
HARVESTING & VINIFICATION : The grapes are hand-picked into crates and sorted manually in the vineyard before a second, table sorting in the cellar. A proportion is destemmed, the quantity being determined by the nature of the vintage and the parcel, and the grapes are fed by gravity into the vats to ensure the integrity of the berries. Fermentation takes place in thermo-regulated stainless-steel vats for 20 to 30 days, with two long pumping over sessions daily. Punching down is decided after tasting. Pressed pneumatically. Malolactic fermentation in vat. The wines are clarified by settling over winter in the cellar. Barrel filling occurs in the spring.
AGEING : 18 months in 36-hectoliter oak Stockinger foudres, and 8-hectoliter terracotta amphorae. Unfined and unfiltered at bottling.
PERSONALITY : The well-being of the vines is detectable in the wines that come from this parcel, reflected in the harmony, the delicate floral notes and the spicy aromas of the wine with its fine tannic structure marked by a sense of place.
